I just made some awesome chicken salad! Used a rotisserie chicken and added celery, green onions, grapes, crushed pineapple, and pecans. The dressing was mayo, yogurt, lemon juice, brown sugar, curry powder, salt and pepper. Emoticon 4951

That sounds really good. Rotisserie chicken makes the best chicken salad. HEB has a pretty good one.  I think I like their turkey salad even better, it has cranberries in it. 4951

I also like a version I make with green onion, boiled egg, celery, pecans, ranch dressing and mayo.

Those all sound wonderful!!! DH would have a cow if I put anything like grapes or pecans in mine. He's such a traditionalist and doesn't think outside the box at all. Even with tuna salad he likes sweet pickle relish and I like dill pickle, so unless I want to make separate batches I usually go with the sweet pickle. Might be time to take a stand!!! 4951

So many of the things I cook I do to my husband's liking. So i say stand your ground! One night each week we have "dad's choice". He gets to chose what I make for dinner. Normally it's something involving mashed potatoes. I do the menu planning, shopping, cooking, and clean up. I allow myself to make something just the way I like it at least once a month. He can find something else to eat if he so chooses. 4951

We do meat free night a couple times a month. I will do portobello burgers or something else with lots of mushrooms. It's the only way I can get away with no meat! I think sometimes he's too tired to care what he's eating, as long as it's food! 4951

I really dislike the mushy deli-style chicken or tuna salad that is a big glob of mayo and the rest unidentifiable ingredients.  Instead, I like to make it with large diced colorful ingredients, including rotisserie chicken, dried apricots, pecans, celery and halved grapes. Instead of dressing or heavy mayo, I prefer to add a very small amount of mayo made with olive oil, just enough to coat it and for it to slightly hold and stick together in a spoon, but where you can clearly ID all ingredients. 4951

No fruit in Chicken or Tuna salad for me EVER. The more Garlic and spices the better. No Relish, No dill, No pickles either...Onions, easy on the celery, heavy on the cayenne and garlic!  4951

We eat chicken salad or tuna salad about once a week.  I like it on a bed of lettuce with some carrot or celery slices.  We've tried it with fruit, but we both prefer it more on the savory side, not sweet.My wife makes a great fresh broccoli salad that has sliced grapes, red onions, etc.  The sweetness of the grapes works well with the raw broccoli. 4951
