Does anybody can their own foods here? I've been interested in learning how for awhile, but I don't know of anybody who can teach me or can answer any questions I may have. I'm afraid I'll mess things up if I just follow the directions from a How-to book. With it being hurricane season, I figured food that I canned myself would be a lot better than the store bought stuff. 4951

I don't can but I do make refrigerator pickles and freezer jams. It's the same without the water bath. It's not hard - the best tip is to make sure all your jars and equipment is sterilized. I run everything through the dishwasher and then into a port of boiling water. 4951

My parents did a lot of canning, but I didn't pay much attention.  My dad had a big garden so they needed to can or freeze the vegetables.  When fruits were cheap, my mom would make jelly/jam. 4951

See, when I go to youtube, I try really hard to pay attention and just watch the videos on the subject that I need to learn. Somehow I still manage to get sucked Into the void, and before you know it, I've wasted a whole day watching videos of cats and other animals doing cute things, random song parodies and other completely useless videos lol. That being said, I have watched a few videos, and I think I have the basic concept down. I think I'm just paranoid I'm gonna screw up and somehow poison and kill us all with poorly canned food lol. 4951

usually there is a lot of information thru the farm extension service and various county agencies that deal with agriculture 4951

Used to assist my mom and grandmother when I was younger canning years ago.We used to can everything.How you do it depends on what it is.Sanitize is the trick.High acid foods are not as a big a concern as lower acid foods.Seems like a lot of work for little pay out in my book.We used to spend a whole day canning a few times a year depending on what was being harvested.Jams and Jellies always had a paraffin top on them.Anything else was always put up in ball jars. 4951

Start with tomatoes. You should be able to buy them at super low prices any time now. They are very, very simple to can and you only need a water bath canner, not a pressure canner. 4951

Go to Farmer Bill's and ask his wife.  She used to do a lot of canning.  She might work with you if you buy the veggies from the. 4951
