I bought eggplant for my dd to try.  I was hoping the good people of KDC had a recipe I could try(we are making it together). 4951

I don't have my recipe for eggplant parmesan handy, but this is close.

When I eat at a Thai restaurant, I usually get eggplant in black bean garlic sauce. I have never been able to successfully make it at home, but this recipe looks similar, minus the tofu.http://www.taste.com.au/recipes/9915/tofu+and+eggplant+in+black+bean+garlic+sauceGood luck! 4951

My dad used to cook eggplant down with shrimp and onions.  Emoticon  Fried eggplant was also very good.Of course, when he could get shrimp cheap, he made:Shrimp spaghettiSquash with shrimpBaby Lima beans with shrimpMirliton with shrimp (aka Chayote or vegetable pear)My wife learned how to make those last three and we still enjoy them!! 4951

I love grilled eggplant as a side dish. I peel it, cut in thin slices, in a small dish put a little olive oil, garlic & any other spice you like & grill them. 4951

@Retired_Engineer: I tried to cook Chayote once. I didn't really know what to do with it though. It just looked interesting. I used to be a more adventurous cook, but DH has a few particular dishes that he likes, so I usually just stick with those. Now I want to cook some fun stuff again.

@MAHM:  When you cook mirliton/chayote, make sure you peel all of the tough skin (or as much as you can).  Then chop it into cubes and boil it until it starts to become tender.  Then saute some onions and add the mirliton to the pan.  Cook until fully tender.  If you put shrimp in it, add them with the mirliton to the onions.  Add salt and black pepper to taste. Simple and very good.Sometimes, my wife will take the boiled mirliton, sauteed onions and shrimp, and put them in a casserole dish.  Add some Parmesan cheese, and sprinkle bread crumbs and Parmesan on top.  Bake until tender.
