Has anyone done this.  We tried tonight and it was burnt tasting and not crispy.Looking for some ideas. 4951

I tried to do that in my microwave once, many years ago. Bad idea. My microwave had a very bad smell for months. I worked at a restaurant in another state that made it, and served it with crusty bread, and it was so yummy, but I could never duplicate it.Now I want to make some. I roast garlic bulbs in the oven frequently, but they aren't 'crispy'. The method I use is to cut a sliver off the top and bottom of the entire bulb (all cloves intact), sprinkle olive oil and sea salt over the top and bake in 350degree oven until soft.
Very yummy and great in recipes! Easy to make garlic bread with it too. 4951

You could probably just chop it and sauté in olive oil until it gets slightly colored, but not brown. 4951

@Love2Run:  Agreed!  Once garlic turns brown, it develops a horrible bitter taste.My dad used to eat a head of roasted garlic with crackers every day to lower his blood pressure.  It worked, but his skin seemed to ooze garlic smell!

@Love2Run: I do something very similar on the pit. I just cut the top about 1/4" down, oil and salt, then leave it on the smoker until it starts get soft. It's great in a pot of mashed potatoes, melted butter for bread, on the skin of a chicken to hold rub on, etc..

@attila: Great ideas! I also make my own garlic-infused olive oil. Just plop a oouple of cloves into the decanter, with a sprig of rosemary or oregano. I use it on everything! @Retired_Engineer, your dad sounds like a smart man. What's the smell of garlic among good friends?!?!

I've been thinking more about this and I wonder if Carino's uses dehydrated garlic and just sautes it in a little oil? that would, I think, give the crunchy texture. 4951
