We have had:Roasted chicken with mango salsa and homemade potato wedges on Saturday night. Grilled chicken kabobs and Spanish rice on Sunday. Grilled cheesburgers and sweet carrots last night. I need something easy enough and kid-friendly. Preferably not chicken or tacos. 4951

For dinner last night, I made pan-grilled fresh red snapper, twice baked potatoes (actually bought these from HEB), and broccolini. 4951

I'm thinking of grabbing a rotisserie chicken along with salad fixins & calling it a night. It's not even 1pm & I'm already beat! I don't see myself cooking tonight. 4951

We're having Pork Roast, little red potatoes & fresh broccoli. It's quite simple if you don't have to run to the grocer for any of it. Pork & potatoes in oven, broccoli steamed in the nuker... Takes about 1.5 hrs. from start to finish, with cocktail hour in between! 4951

@Annie:

Just finished. Put the shredded beef over rice and served two veggies with it. Waiting for the pudding to set. Yum. 4951
