We took mom out for her birthday to Pappas Seafood in Humble earlier this afternoon.........It was HER choice.........And she literally took a shopping bag full of leftovers home........With both their strawberry cheesecake AND their pecan praline brownie pie thingy.........She's so lucky...... 4951
   Chili a la FraneyYield   8 servingsMeasure   Ingredient1 tablespoon    Olive oil1 pounds    Lean ground beef1 pounds    Lean ground pork2 cups    Chopped onions1 cup    Green peppers; chopped1 cup    Celery; chopped1 tablespoon    Garlic; minced1 tablespoon    Dried oregano2    Bay leaves2 teaspoons    Ground cumin3 tablespoons    Chili powder3 cups    Crushed tomatoes1 cup    Beef stock1 cup    Water    Red pepper flakes    Fresh ground black pepper; t    Salt; to taste2 cups    Kidney beans, cooked    Garnishes:    Monterey jack cheese; shred    Shredded lettuce    Chopped red onion    Chopped coriander    Sour cream    Lime wedgesHeat oil in heavy Dutch oven; add beef and pork; cooking and breaking up until lightly browned; add onions, green pepper and celery; sweat 2 minutes; add other ingredients except beans, mixing well; bring to a boil, reduce heat, cover and simmer 20 minutes; discard bay leaves; add beans, mix well and simmer another 10 minutes; ladle into warm soup bowls and serve with warm tortillas, tortilla chips or crackers; pass garnishes separately.
